Waitrose is introducing an exclusive first-to-market fish “En Papillote” range, bringing a traditional French cooking method to British supermarket shelves.

The new range features fresh fish delicately folded into hand-crafted parchment paper parcels, designed to create rich, aromatic flavours.

The launch comes as the retailer responds to growing interest in French cuisine.

Wild Garlic Scottish Salmon Fillets come with wild garlic butter, cracked black pepper and chives.

The Thai Green Inspired Cod Fillets are prepared with Thai-inspired butter, fresh chillies and coriander.

Completing the range, Provençal Inspired Haddock Fillets feature oven-roasted tomatoes, black olives, capers and lemon.

Each product is made with fresh, not frozen fish, except during seasonal supply challenges. The new range requires no hands-on preparation and can be ready to serve in as little as 20 minutes.

The cooking method aims to make the paper retain the fish’s natural moisture while infusing it with aromatic seasonings.

This technique creates a rich, flavour-packed sauce and guarantees perfectly tender fish every time.

The parchment parcels are designed to steam in the tray, making the cooking process straightforward for home cooks.
